    Typical rind crust cheese washed with water and salt, with a characteristic reddish color in the first months of seasoning, darker and grayer with the passing of the months and the appearance of mold on the surface. The dough is compact, with a little oily cut and becomes more and more flavorful as it matures. Maturing can vary from a minimum of 60 days to 12 months.
