    Small and tasty goat cheeses produced by Les Ecureuils using the "lactic curd" technique, traditionally used in the south of France and in the closest Canavese. The soft flowery crust satisfies the sight and to the nose it evokes delicate iridescent hints.

    Cheese made from whole raw goat's milk, whose pulp, soft, semi-hard or hard depending on the ripening period, is ivory white, compact and can become crumbly after a prolonged period of seasoning. Just during the maturing on the surface of the crottin develops a delicate white mold called Penicillum sometimes dotted with blue. The taste is intense and slightly sapid: more sweet and delicate if the cheese is young, with a moderate spiciness if tasted after a few months of seasoning.
