A cow's milk cheese of Alsatian origin that immediately strikes the eye for the originality of the crust, covered with colorful edible flowers. It is a generous toma, whose sweet paste with frank aromas is enriched by the complex floral flavors of the crust.
The Tomme aux fleurs is a raw cow's milk cheese, with pressed paste: first seasoned about four months in fresh cellars, it faces a second period of aging necessary to add the flowers to the crust and allow them to mature as aromas in the sweet dough. The spring flowers, from mauve to pink, are carefully selected and dehydrated before their use. The pasta is fragrant, delicate if fresh and with floral aromas that make this wedding with spring flowers unique and magical.
