The Tuma of the Centrale is a cheese made from pasteurized cow's milk with a soft and elastic paste of a pale yellow colour, the crust, not edible is smooth and light brown. The taste is pleasant and influenced by the maturation between 60 and 90 days at controlled temperature and humidity conditions.
The Tuma of the Centrale weighs about 6kg, has a diameter of about 30cm and a height of between 8 and 10cm.
