,A tasty appetizer that in ancient times was a main dish. The potatoes, not too large, with the peel, are cooked in salted water with the addition of a piece of bacon. Ricotta (fresh cheese from cow's milk) is seasoned with salt and spices. The sausage, is made from pork casing within which is inserted a mixture of pork and beef meat, in addition to the mixture of herbs, natural flavorings and Marsala. The dish is served with hot potatoes.
