Provolone is cow's milk-cheese which has a firm texture and a mild, smoky flavor. The cheese has a golden-brown rind and comes in various forms. The pear shape is most recognizable. Most often it is aged for 2 to 3 months and it has a pale yellow colour which turns darker with maturation.

The flavor ranges from mild and sweet when young to spicy and strong, somewhat salty as it ages.

It is pale yellow in color but deepens in color and flavor the longer it is aged.

Provolone is a good cooking cheese and when aged it can be used for grating. It goes well on sandwiches or it can be eaten alone as an appetizer.
