VINIFICATION
Vineyards in Martignana area, on the south coast of the island, thanks to the exposure and the age of the vineyards produces a limited number of bunch of grapes which are harvested at the end of August. Selected grapes wilt on typical "stinnitura", for 20-30 days and manually turned over. The grapes are pressed and the most, rich of sugar, ferments at 25 -28° C temperature. Refinement in allier barriques for 24 months.
DESCRIPTION
It’s a reddish brown topaz colour with an orange border. The flavour is scented, with orange-blossom honey, dates, dried fig, apricot jam, sweet spices as cinnamon or nutmeg. The taste is sweet, perfectly balanced, the end is very long with harmonious sensations.
MATCHES
It’s ideal with chocolate, gianduia, or as a big meditation wine.
