VINIFICATION
Vinification in red with skins maceration for around 8 days.
Fermentation at controlled temperature (28/29°C). Frequent déchargements and delastages to have a strong anthocyans disintegration which leaves an intense and persistent fruit. Refinement in heat-controlled tanks until March.
ORGANOLEPTIC FEATURES
It’s ruby red colour, quite clear and with a good consistence. The flavour intense and persistent is characterised by cherry notes, followed by spiced scents, in particular black pepper. The taste is strong, surrounding, with mellow but not astringent tannins. The taste is pleasing, intense, long and well-structured.
