VINIFICATION
Vinification begins with the alcoholic fermentation in little wood vats; the malolactic fermentation in steel tanks.
REFINEMENT
The minimum refinement takes 12 months for each bottle.
TASTING
The flavour is intense and fine: it moves from blackberries and bilberries to fresh jam notes; thanks to the wood we have sweet and elegant spiced notes. The taste is strict and persistent.
MATCHES
It’s ideal with game, dishes with wild boar, stewed and braised red meat or mature cheese.
